This mile-high vegetable and hummus sandwich makes the perfect heart-healthy vegetarian lunch to go. Mix it up with different flavors of hummus and different types of vegetables, depending on your mood.
Ingredients:
2 slices whole-grain bread
3 tablespoons hummus
¼ avocado, mashed
½ cup mixed salad greens
¼ medium red bell pepper, sliced
¼ cup sliced cucumber
¼ cup shredded carrot
Directions:
Spread 1 slice of bread with 3 tablespoons hummus and the other with 1/4 avocado. Fill the sandwich with 1/2 cup greens, 1/4 bell pepper, 1/4 cup cucumber and 1/4 cup carrot. Slice in half and serve.
