Mango Cucumber Salad

This crisp salad is sweet, tangy, tart, and spicy all at once.

Ingredients:
  • 1/2 cup white wine vinegar
  • 1/2 cup grapeseed oil
  • 1 medium english cucumber (about 1 pound), cut into batonnets
  • 2 large mangos (about 1 pound each), peeled and cut into batonnets
  • 1 teaspoon chile-lime seasoning (such as tajin)
  • 1/2 cup crumbled feta
  • 1/2 cup basil leaves
  • kosher salt
Directions:
  1. Add white wine vinegar and grapeseed oil to a small bowl and whisk to combine. Toss cucumber and mango pieces together on a large platter, drizzle dressing on top, and toss again to distribute dressing. Season salad with chile-lime seasoning, add feta pieces and basil leaves, and toss again. Season salad with salt and serve.
