Grilled Salmon Fillets with a Lemon, Tarragon, and Garlic Sauce

Ingredients:
  • 4 (4 ounce) salmon fillets
  • salt and ground black pepper to taste
  • 4 tablespoons olive oil, divided
  • ½ cup mayonnaise
  • 2 tablespoons dijon mustard
  • 2 tablespoons chopped fresh tarragon
  • 1 tablespoon finely grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 4 cloves garlic, minced
Directions:
  1. Preheat an outdoor grill for high heat and lightly oil the grate.
  2. Season salmon fillets with salt and black pepper; drizzle with 2 tablespoons oil.
  3. Whisk mayonnaise, Dijon mustard, tarragon, remaining 2 tablespoons oil, lemon zest, lemon juice, and garlic together in a bowl; season with salt and black pepper. Set sauce aside.
  4. Cook salmon on the preheated grill until it flakes easily with a fork, 5 to 10 minutes. Transfer to a serving plate; top with sauce.
