This quick and easy chopped salad is inspired by the flavors of the Mediterranean, including chickpeas, cucumber and feta. A garlicky oil and vinegar dressing brings everything together.
Ingredients:
2 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon ground pepper
1 (15 ounce) can no-salt-added chickpeas, rinsed
1 cup diced cucumber
1 cup quartered cherry tomatoes
⅓ cup chopped parsley
¼ cup finely chopped red onion
¼ cup halved kalamata olives
¼ cup crumbled feta
Directions:
Whisk 2 tablespoons oil, 2 tablespoons vinegar, ¼ teaspoon garlic powder, ¼ teaspoon salt and ¼ teaspoon pepper in a large bowl. Add 15 ounces chickpeas, 1 cup cucumber, 1 cup tomatoes, ⅓ cup parsley, ¼ cup onion, ¼ cup olives and ¼ cup feta; toss to coat.
