Blueberry Baked Oatmeal

This baked oatmeal recipe features lemon and cardamom with plenty of sweet and juicy blueberries. Baked oatmeal recipes like this one can be prepped on Monday for an easy grab-and-go breakfast for the rest of the workweek.

Ingredients:
  • 2 ½ cups old-fashioned rolled oats
  • 1 ½ cups whole milk
  • 2 large eggs, lightly beaten
  • ¼ cup dark brown sugar plus 2 tablespoons, divided
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1 tablespoon grated lemon zest
  • 3 tablespoons lemon juice
  • 1 teaspoon ground cardamom
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups fresh or unthawed frozen blueberries
Directions:
  1. Preheat oven to 375°F. Lightly coat a 7-by-11-inch baking dish with cooking spray.
  2. Stir oats, milk, eggs, 1/4 cup brown sugar, melted butter, vanilla, lemon zest, lemon juice, cardamom, baking powder and salt together in a large bowl until combined. Fold in blueberries until evenly distributed. Pour the mixture into the prepared baking dish; sprinkle evenly with the remaining 2 tablespoons brown sugar.
  3. Bake until golden brown and set, about 40 minutes. Let cool for at least 10 minutes or up to 30 minutes. Serve warm or at room temperature.
